The Sound of Albondigas - channeling my Mexican roots and making this traditional meatball soup.

It reminds me of the movie Fools Rush In with Salma Hayek & the late Matthew Perry. She tells him about her grandmothers house in Mexico where she makes albondigas. He repeats in his white American accent as AL-BONE-Dee-Gass. And that’s how I hear it in my head 😆

Tried to ask my teenaged daughter to come watch the movie with me and eat soup, but alas… I live to beg another day.

RECIPE

For Meatballs:
▢ 1 pound ground beef or ground turkey , (recommended 80% lean / 20% fat)
▢ 1 egg
▢ ¼ cup chopped fresh spearmint, (lightly packed) - or use about 2 teaspoon dried mint
▢ ¼ cup chopped parsley , (lightly packed)
▢ ½ cup uncooked white rice
▢ ½ tablespoon minced garlic
▢ 1¼ teaspoons cumin powder
▢ 1½ teaspoons kosher salt
▢ ½ teaspoon dried oregano
▢ 1¼ teaspoons onion powder
▢ ½ teaspoon black pepper
For Soup:
▢ 2 tablespoons olive oil
▢ 1½ cups diced yellow onion
▢ 3 serrano peppers, (seeded and chopped) Or use 1 small poblano pepper
▢ ½ tablespoon minced garlic
▢ 4 cups chicken broth
▢ 2 cups water
▢ 2 carrots, (peeled and diced)
▢ 14.5 oz diced tomatoes, (no seasoning and no salt added)
▢ 8 oz small red or Yukon gold potatoes, (cut into 6 pieces each, or cut in half if you are using baby potatoes)
▢ 1 zucchini , (diced)

Want to raise confident teens >>> young adults ? Allow them to do hard things allow them to be in a position where they have to figure something out. You want them to learn to trust themselves outside of your guidance.

If they ask for help, it’s not that you shouldn’t help them, but you shouldn’t help to make their struggle easier Instead, ask them what they think they should do and teach them to ask self problem-solving questions instead of you always giving them the answers.

Clutter can be overwhelming. Our to do list can make us want to give up. Our brains convince us that it’s all too much.

But using a timer and breaking our tasks into smaller bites can feel more manageable.

Whatever you’re tackling today, just do the next right thing. Small steps, small wins. You can do this 😄

“Just be yourself.” My entire year has been about acceptance. This post is about self-acceptance. Not worrying about who I’m not, but accepting that I’m a flawed human who loves through this world at her own pace.

What if we spent more time moving through our day unapologetically? Making choices out of abundance goodness and peace instead of defensiveness and strife - oh how unburdened would we be?

Unburden yourself, friend. Because what they think really doesn’t matter. The collective “they” are probably not out there doing the things you care about either. So be free. Be you. Be brave. Be where you need to be.

When your brain is scattered, there have to be some things that bring you joy. Some type of small routine that grounds you and pulls you back from all of the thoughts and tasks and to do lists on your mind.

Believe me, as a busy mother with ADHD, my brain wants to take me in all sorts of directions. And I wind up feeling guilty for the things that I missed because I was thinking about things too quickly, and moving through my day in a scattered way instead of a methodical way.

The truth is, an ADHD brain will do. It’s best to conserve energy by moving through life too quickly. But the moments when we can stop and rest and think through our tasks, our brain gets to catch up with our body and we can make better choices.

What is a task that keeps you grounded in order to move forward when your brain feels scattered?
